About Hong Kong and Chinese food

The name Hong Kong means in the Chinese language the "Fragrant Port". How did this place come to have such a beautiful name? There are several different legends about the origin of this name. The most reliable one according to popular opinion is that this place was once a port for the transit and distribution of incense, which is an aromatic substance, such as a gum or wood, that burns with a pleasant odor. During the Ming Dynasty, Dong Guan, Bao An (renamed Shen Zhen in 1979) and adjacent places produced in great abundance a kind of incense which appealed to great numbers of people and found markets in the Jiangsu province, the Zhejiang province, and many other regions of the country. Since incense merchants generally loaded their cargoes on ships at the northern part of the coast of this island to be sent to the Guangzhou city and the Jiangsu and Zhejiang provinces, people began to call this port the incense port. As the noun "incense" and the adjective "fragrant" are identical in the Chinese language, the port was considered later to mean a fragrant port, though it was connected only with the sale and transshipment of a commodity that had fragrance. The village in the vicinity of the port was likewise called the "Fragrant Port Village".
In 1840, the Opium War broke out. After the British aggressors landed at the southern part of the coast of the island, they marched northward, guided by a local inhabitant. When they went by the Fragrant Port Village, a British officer asked about the name of the village. The guide answered: "Hong Kong", in his local dialect. About Hong Kong

The city of Beijing in the era of the Ming and Qing dynasties was a “city of cities”, because it was made up of three layers of city wall or, in other words, three concentric city walls. The innermost circle of this city of cities was what is commonly called the “Forbidden City” or “Palace City”. Its wall was 6 li (3,000 meters) in circumference and has four gates, namely the Front Gate, the Gate of Divine Prowess, the Eastern Gate and the Western Gate. The central or second circle was the wall of the imperial city, which was 18 li (9,000 meters) in circumference and also had four gates, namely the Heavenly Peace Gate (Tian An Men), the Earthly Peace Gate, the Eastern Peace Gate and Western Peace Gate. The outmost circle was the capital city wall, which was a two-layer wall. The inner city wall was 46 li (23,000 meters) in circumference and had nine gates. The central gate was most lofty and magnificent and served only for the emperors to enter and leave the capital. The well-known city of Beijing is in reality made up of these layers of brick walls and ponderous iron gates.
Many interesting stories have been told about Beijing. They are inseparably bound up with the city walls, the gates and Tian An Men. For instance, there is a story about the famous army commander General Nian Gengyao of the Qing Dynasty in connection with Tian An Men. One day General Nian returned in triumph with his soldiers from an expedition. He and all the soldiers were received by Emperor Yongzheng at the Tian An Men square. It was very hot, though there was not much sunlight. In order to show his kindness, the emperor ordered the soldiers to take off their hats. His order was ignored. Then General Nian gave the order for him. At one upward stroke of his arm all the soldiers instantly removed their hats. The emperor was greatly alarmed. For this and for some other reasons, which were also connected with General Nian’s relationship with the emperor and with a drama formerly staged in the Palace concerning the right of succession to the throne, which is well-known to people versed in the history of China, General Nian was stripped of his power by the emperor and demoted step by step to the rank of a common soldier and ordered to commit suicide at last.Related articles:

Let's talk about entertaining guests at dinner. People of all nationalities in the world have dinner every day and entertain guests to dinner from time to time. But the ways of entertaining and eating are greatly different. A Chinese businessman made an interesting mistake years ago in his effort to please foreign guests. Urged on by several Chinese friends, that person once asked two Americans to dinner. The first dish that happened to be served was the sliced chicken with egg white. The American who thought that he knew the ropes asked, "Is this what I ordered?" Having received the affirmative answer, he said with delight, "So I'll eat first." He moved the plate towards him and began to eat with relish, plying knife and fork. In embarrassment the few Chinese present couldn't help but comply with the wish of the guest and began to eat each the dish he himself had ordered. Thus, the other American was doomed. He was forced to eat up against his will the soup with shredded pork and hot pickled mustard tuber, which was served last. As a matter of fact, this was a trifling matter. But it is just in such trifling matters we see the difference in cultural spirits. The ideological core of Chinese culture is consciousness of the group whereas the ideological core of Western culture is consciousness of the individual. What is consciousness of the individual? It means in a nutshell that everyone is a separate entity that exists by itself, and everyone is an independent person with free will. Because of this free will everyone must strive to gain happiness and welfare by his/her own effort and everyone is to be held responsible for his/her own act, whatever it is. Even if he/she has done something wrong under the blameworthy guidance of someone else, he/she alone must suffer the consequence. Because of the belief that everyone is an independent person, one should not tolerate interference by other people in his/her choice or act unless the choice or act constitutes a hazard to public safety or welfare. It is so not only with the choosing of one's food or clothing, but also with one's decision which candidate for a high government position he/she will cast his/her vote for. What I want to eat or to wear has nothing to do with other people. I don't need to ask other people for permission. On the other hand, I should refrain from imposing my wish on anyone else. In a restaurant everyone should choose from the menu the dishes that he/she likes to eat, and everyone should pay his/her own bill.
What is consciousness of the group? It means in a nutshell that everyone is part of the group. The benefit of the group is the benefit of the individual. The individual must subordinate his/her will to the will of the group. The individual is not an entity, alone and by itself. It pertains and adheres to the group. Even the choosing of food and clothing is not something to be done by the individual completely without regard to the wish of the group. When people dine together, especially on festive occasions, there is a greater need for the individual to take into account the interests of the whole group. How disgraceful it would be if each of those sitting around the table should insist on ordering a dish that others had no relish for. Indeed, there would be no reason for them to have dinner together.
Therefore, difference in the ideological core entails difference in cultural personality.
Cultural phenomena, especially those which are almost universal around us, embody the cultural core, though we often lose sight of this fact because the phenomena are "too common".

What is the core of Chinese culture, cultural personality, Cultural phenomena? What is the Chinese cultural behavior and cultural psychology? That is to say, only when a Westerner has mastered the ideological core of Chinese culture can he/she look at a Chinese with understanding, with penetration, and with precision.
